Tour description
On this tour we will taste Moroccan tapas. We will visit the most delicious places in the red city.
The tour is divided into two parts. First we visit the restaurants in the medina where the locals of Marrakech eat.
Flavors of Marrakech takes you to delight in delicious meals and dishes cooked by the hands of Marrakech locals and also where famous personalities from past and present history have been.
Tajines, the great Moroccan stew:
Vegetables cooked with meat (chicken, lamb or beef) or fish, over a low heat and for hours (stews), in a clay pot with a long cone-shaped lid. These are Moroccan tajines (or tagines).
A dish shared with the rest of the Maghreb countries and, without a doubt, a good summary of the essence of typical Moroccan food.
Khbuz bread, which is eaten alone:
The main characteristic of Moroccan bread (or khbuz bread ) is that it is flat and is baked completely against the walls of the oven. This way, the product has much less crumb than “European” breads and is absolutely delicious.
It accompanies all kinds of meals, but the truth is that it is so delicious that many people eat this typical Moroccan food without any accompaniment , as if it were a bun.
The omnipresence of couscous:
If tagine is essential to know and understand the basis of typical Moroccan food , couscous is no less so. Like the former, it is a stew based on meat and vegetables but, in this case, the base is wheat semolina . In addition, all of this is cooked with plenty of chickpeas.
Just as important as the dish itself is the cooking broth , which is then used to serve the couscous once it is on the table. This broth can also be the basis for harira, which is the soup, by definition, of Moroccan cuisine.
Harira, the star of Moroccan soups:
Essentially, harira is a soup made from the broth used to cook vegetables, various meats and legumes. To make it one of the most popular dishes of typical Moroccan food, tomatoes and aromatic herbs such as mint and coriander are added. And, in addition, a not-so-secret ingredient is added, harissa , which we will explain later.
